how we do our steel cut oats


right before bed, i do this:
1. melt 2 TB of butter in a large pot over med heat.
2.  add 2 cups of steel cut oats
3. stir and toast the oats a bit
4. add 6 cups of water
and a pinch of salt, bring to a boil,
then turn off the heat, cover it up
and say goodnight.

in the morning, take the lid off, say good morning to those cooked oats, warm them back up on the stove, dish them out, add whatever things you like (our favorites, depending on what we have, are berries, both fresh and/or dried, a pinch of brown sugar and/or cinnamon and milk). easy-peasy, right? we keep what's leftover in an air-tight container in the fridge and usually have enough to re-heat for the next week of breakfasts.

and a tasty tid-bit: my friend bethany, who knows a lot about food and nutrition, told me that steel cut oats help to fight against depression.  who knew something like that could taste so good?
